Grapes harvested late with the aim of discovering the maximum potential of the variety in the relationship between ripeness/ natural acidity of the variety and granite soil.
Manual harvest into small perforated boxes. Reception with total destemming.
Alcoholic fermentation took place in stainless steel tanks at controlled temperature, followed by malolactic fermentation in used 225-liter American and French barrels where it aged for approximately 6 months.
